Research from Harvard School of Public Health used a carb to fiber ratio to identify a whole grain food. The research was based on the American Heart Association 2020. It stated that a product should have at least one gram of fiber to every 10 grams of total carbohydrates.This is the ratio of fiber to carbohydrates in an actual whole grain.
At present, percentage of fiber in wheat 1.20% and rice 0.20%. Carbohydrates to fiber ratio in wheat is 63.5:1 and in rice 395:1. Above ratio is not suitable for humanbody. That’s why these above grains are Negative grains.
We should get habituated to take five Positive grains 1. Little milet, 2. Kodo millet, 3. Barnyard millet, 4. Foxtail millet and 5. Brown Top millet. Carbohydrates to fiber ratio in five positive grains less than 8:1.
They release glucose into the blood over a period of 5 to 7 hours in small quantities.
